Description

  • 1/2 teaspoon salt
  • 1 cup water
  • 1/2 cup unsalted butter
  • 1/2 cup creamy peanut butter
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter (for frosting)
  • 1/2 cup creamy peanut butter (for frosting)
  • 6 tablespoons milk (for frosting)
  • 1 teaspoon vanilla extract (for frosting)
  • 4 cups powdered sugar (for frosting)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 10×15-inch jelly roll pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, and salt.
  3. In a saucepan, combine water, 1/2 cup butter, 1/2 cup peanut butter, and oil. Bring to a boil, then remove from heat and let cool slightly.
  4. Pour peanut butter mixture into dry ingredients and mix well. Add eggs, buttermilk, and 1 teaspoon vanilla; stir until smooth.
  5. Pour batter into prepared pan and bake for 20-25 minutes, or until a toothpick comes out clean.
  6. While cake is baking, prepare frosting: In a saucepan, melt 1/2 cup butter and 1/2 cup peanut butter with milk. Bring to a boil, then remove from heat. Stir in vanilla and powdered sugar until smooth.
  7. Pour warm frosting over hot cake immediately after removing from oven. Spread evenly and let cool completely before serving.
