Mixed Berry Pie

A delicious and vibrant mixed berry pie with a flaky crust and sweet-tart filling.

For the Crust:

  • 2 cups all-purpose flour
  • 1 tsp salt
  • 2/3 cup cold unsalted butter, cubed
  • 46 tbsp ice water
  • 4 cups mixed berries (strawberries, blueberries, raspberries, blackberries)
  • 3/4 cup granulated sugar
  • 3 tbsp cornstarch
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 egg, beaten (for egg wash)
  • 1 tbsp coarse sugar (for sprinkling)

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tbsp at a time, until dough comes together. Divide into two discs, wrap in plastic, and chill for 30 minutes.
  3. Preheat oven to 375°F (190°C). In another bowl, toss berries with sugar, cornstarch, lemon juice, and vanilla.
  4. Roll out one dough disc to fit a 9-inch pie dish. Add berry filling.
  5. Roll out the second dough disc and place over berries. Crimp edges, cut slits on top, and brush with egg wash. Sprinkle with coarse sugar.
  6. Bake for 45-50 minutes until golden and bubbly. Cool before serving.

Notes

You can customize the seasonings to taste.
