For the Crust:

  • 2 cans (5 oz each) tuna in water, drained
  • 1/2 cup diced cucumber
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, sliced
  • 2 tbsp extra virgin olive oil
  • 1 tbsp lemon juice
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • 1/4 cup crumbled feta cheese

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the drained tuna, cucumber, cherry tomatoes, red onion, and olives.
  2. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
  3. Pour the dressing over the tuna mixture and gently toss to combine.
  4. Sprinkle the feta cheese on top before serving.
  5. Serve chilled with pita bread or over a bed of greens.
