For the Crust:
- 2 cans (5 oz each) tuna in water, drained
- 1/2 cup diced cucumber
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup Kalamata olives, sliced
- 2 tbsp extra virgin olive oil
- 1 tbsp lemon juice
- 1 tsp dried oregano
- Salt and pepper to taste
- 1/4 cup crumbled feta cheese
Instructions
1. Prepare the Crust:
- In a large bowl, combine the drained tuna, cucumber, cherry tomatoes, red onion, and olives.
- In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.
- Pour the dressing over the tuna mixture and gently toss to combine.
- Sprinkle the feta cheese on top before serving.
- Serve chilled with pita bread or over a bed of greens.
