For the Crust:
- 2 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 3/4 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1 large egg
- 1 tablespoon lemon zest
- 2 tablespoons fresh lemon juice
- 1/2 teaspoon vanilla extract
- 1/2 cup granulated sugar (for rolling)
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a medium bowl, whisk together flour, baking powder, and salt.
- In a large bowl, beat butter and sugar until light and fluffy. Add egg, lemon zest, lemon juice, and vanilla extract; mix until combined.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Shape dough into 1-inch balls, then roll each ball in granulated sugar to coat.
- Place dough balls on prepared baking sheets, spacing them 2 inches apart. Flatten slightly with the bottom of a glass.
- Bake for 10-12 minutes, or until edges are lightly golden. Let cool on baking sheets for 5 minutes before transferring to a wire rack.
