For the Crust:
- 1 lb fresh green beans, trimmed
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 tbsp lemon zest
- 2 tbsp lemon juice
- 1/4 cup pine nuts, toasted
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F (220°C).
- Toss green beans with olive oil, garlic, salt, and pepper on a baking sheet.
- Roast for 15-20 minutes, stirring once, until tender and slightly charred.
- Remove from oven and toss with lemon zest, lemon juice, and toasted pine nuts.
- Serve immediately.
