For the Crust:

  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1/4 cup pine nuts, toasted
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C).
  2. Toss green beans with olive oil, garlic, salt, and pepper on a baking sheet.
  3. Roast for 15-20 minutes, stirring once, until tender and slightly charred.
  4. Remove from oven and toss with lemon zest, lemon juice, and toasted pine nuts.
  5. Serve immediately.
