For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup grated parmesan cheese
- 1/2 cup breadcrumbs
- 2 cloves garlic, minced
- 1 lemon, zested and juiced
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp chopped fresh parsley
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a shallow dish, mix parmesan cheese, breadcrumbs, garlic, lemon zest, oregano, salt, and pepper.
- Dip each chicken breast in lemon juice, then coat evenly with the parmesan mixture.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden.
- Transfer chicken to the prepared baking sheet and bake for 15-20 minutes until cooked through.
- Garnish with fresh parsley and serve with extra lemon wedges if desired.
