For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp chopped fresh parsley

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a shallow dish, mix parmesan cheese, breadcrumbs, garlic, lemon zest, oregano, salt, and pepper.
  3. Dip each chicken breast in lemon juice, then coat evenly with the parmesan mixture.
  4. Heat olive oil in a large skillet over medium-high heat. Sear chicken for 2-3 minutes per side until golden.
  5. Transfer chicken to the prepared baking sheet and bake for 15-20 minutes until cooked through.
  6. Garnish with fresh parsley and serve with extra lemon wedges if desired.
