For the Crust:

  • 1/4 cup unsalted butter
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1/4 cup capers, drained
  • 1/4 cup fresh lemon juice
  • 1 teaspoon lemon zest
  • 1/4 cup chicken or vegetable broth
  • 2 tablespoons fresh parsley, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a medium saucepan, melt butter with olive oil over medium heat.
  2. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in capers, lemon juice, and lemon zest. Cook for 2 minutes.
  4. Pour in broth and simmer for 5 minutes, allowing the sauce to reduce slightly.
  5. Remove from heat and stir in chopped parsley. Season with salt and pepper to taste.
  6. Serve warm over fish, chicken, or pasta.
