For the Crust:
- 1/4 cup unsalted butter
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/4 cup capers, drained
- 1/4 cup fresh lemon juice
- 1 teaspoon lemon zest
- 1/4 cup chicken or vegetable broth
- 2 tablespoons fresh parsley, chopped
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a medium saucepan, melt butter with olive oil over medium heat.
- Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in capers, lemon juice, and lemon zest. Cook for 2 minutes.
- Pour in broth and simmer for 5 minutes, allowing the sauce to reduce slightly.
- Remove from heat and stir in chopped parsley. Season with salt and pepper to taste.
- Serve warm over fish, chicken, or pasta.
