Irish Colcannon Recipe for Comfort Food Lovers

For the Crust:

  • 2 lbs potatoes, peeled and quartered
  • 4 cups cabbage or kale, finely chopped
  • 1/2 cup butter, divided
  • 1/2 cup milk or cream
  • 4 green onions, chopped
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and set aside.
  2. In a large skillet, melt 1/4 cup of butter over medium heat. Add the cabbage or kale and cook until tender, about 5-7 minutes.
  3. Mash the potatoes with the remaining butter and milk or cream until smooth. Stir in the cooked cabbage or kale and green onions. Season with salt and pepper to taste.
  4. Serve warm with an extra pat of butter on top if desired.
