Honey Thyme Roasted Carrots

For the Crust:

  • 1 lb carrots, peeled and cut into sticks
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 1 tbsp fresh thyme leaves
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, toss carrots with olive oil, salt, and pepper.
  3. Spread carrots in a single layer on a baking sheet and roast for 20 minutes.
  4. Remove from oven, drizzle with honey, and sprinkle thyme leaves. Toss to coat evenly.
  5. Return to oven and roast for another 10 minutes until caramelized and tender.

Notes

You can customize the seasonings to taste.
