For the Crust:
- 1 lb carrots, peeled and cut into sticks
- 2 tbsp olive oil
- 2 tbsp honey
- 1 tbsp fresh thyme leaves
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a large bowl, toss carrots with olive oil, salt, and pepper.
- Spread carrots in a single layer on a baking sheet and roast for 20 minutes.
- Remove from oven, drizzle with honey, and sprinkle thyme leaves. Toss to coat evenly.
- Return to oven and roast for another 10 minutes until caramelized and tender.
