For the Crust:

  • 2 cups corn kernels (fresh or frozen)
  • 1 cup cream-style corn
  • 1/2 cup sour cream
  • 1/4 cup melted butter
  • 1/4 cup honey
  • 1 large egg, beaten
  • 1 cup shredded cheddar cheese
  • 1/2 cup cornmeal
  • 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and grease a 2-quart baking dish.
  2. In a large bowl, mix corn kernels, cream-style corn, sour cream, melted butter, honey, and beaten egg until well combined.
  3. Stir in shredded cheddar cheese, cornmeal, flour, baking powder, salt, and pepper until evenly incorporated.
  4. Pour mixture into the prepared baking dish and smooth the top.
  5. Bake for 25-30 minutes, or until the top is golden and the edges are bubbly.
  6. Let cool for 5 minutes before serving.
