Bite-sized cornbread muffins infused with honey butter for a sweet and savory Southern treat.

For the Crust:
- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/4 cup granulated sugar
- 1 tbsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1/3 cup unsalted butter, melted
- 1 large egg
- 1/4 cup honey
- 2 tbsp unsalted butter, softened
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Grease a mini muffin tin.
- In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, mix buttermilk, melted butter, and egg until combined.
- Pour wet ingredients into dry ingredients and stir until just combined.
- Spoon batter into prepared mini muffin tin, filling each cup about 3/4 full.
- Bake for 12-15 minutes until golden brown and a toothpick comes out clean.
- While baking, mix honey and softened butter in a small bowl to make honey butter.
- Brush warm cornbread poppers with honey butter before serving.
