For the Crust:

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 1/3 cup unsalted butter, melted
  • 1 large egg
  • 1/4 cup honey
  • 2 tbsp unsalted butter, softened

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Grease a mini muffin tin.
  2. In a large bowl, whisk together cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, mix buttermilk, melted butter, and egg until combined.
  4. Pour wet ingredients into dry ingredients and stir until just combined.
  5. Spoon batter into prepared mini muffin tin, filling each cup about 3/4 full.
  6. Bake for 12-15 minutes until golden brown and a toothpick comes out clean.
  7. While baking, mix honey and softened butter in a small bowl to make honey butter.
  8. Brush warm cornbread poppers with honey butter before serving.
