Hearty Vegetable Beef Soup

For the Crust:

  • 1 lb beef stew meat, cubed
  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup green beans, chopped
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium-high heat. Add beef cubes and brown on all sides, about 5 minutes.
  2. Add onion, carrots, celery, and garlic. Sauté for 5 minutes until vegetables begin to soften.
  3. Pour in beef broth and diced tomatoes. Stir in thyme, rosemary, salt, and pepper.
  4. Bring to a boil, then reduce heat to low. Cover and simmer for 20 minutes.
  5. Add green beans and continue simmering for another 10 minutes until vegetables are tender and beef is cooked through.
  6. Adjust seasoning if needed and serve hot.

Notes

You can customize the seasonings to taste.
