Hearty Cabbage Roll Soup

For the Crust:

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chopped cabbage
  • 1 (15 oz) can diced tomatoes
  • 1 (15 oz) can tomato sauce
  • 4 cups beef broth
  • 1 cup cooked rice
  • 1 tsp paprika
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large pot, brown the ground beef with onion and garlic over medium heat until fully cooked.
  2. Add the chopped cabbage and cook for 5 minutes until slightly softened.
  3. Stir in diced tomatoes, tomato sauce, beef broth, paprika, and thyme. Bring to a boil.
  4. Reduce heat to low and simmer for 20 minutes, stirring occasionally.
  5. Add the cooked rice and simmer for an additional 5 minutes.
  6. Season with salt and pepper to taste before serving.

Notes

You can customize the seasonings to taste.
