For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup extra virgin olive oil
- 2 large eggs
- 1/2 cup milk
- 1 tsp baking powder
- 1/2 tsp vanilla extract
- 1/4 tsp salt
- 1 cup seedless red grapes, halved
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
- In a large bowl, whisk together flour, sugar, baking powder, and salt.
- In another bowl, beat eggs, then add olive oil, milk, and vanilla extract. Mix well.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
- Gently fold in the halved grapes.
- Pour batter into the prepared pan and bake for 30 minutes or until a toothpick inserted comes out clean.
- Let cool before serving.
