For the Crust:

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup extra virgin olive oil
  • 2 large eggs
  • 1/2 cup milk
  • 1 tsp baking powder
  • 1/2 tsp vanilla extract
  • 1/4 tsp salt
  • 1 cup seedless red grapes, halved

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a 9-inch round cake pan.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. In another bowl, beat eggs, then add olive oil, milk, and vanilla extract. Mix well.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
  5. Gently fold in the halved grapes.
  6. Pour batter into the prepared pan and bake for 30 minutes or until a toothpick inserted comes out clean.
  7. Let cool before serving.
