For the Crust:
- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 4 oz cream cheese, softened
- 1/4 cup brown sugar
- 1 tsp ground cinnamon
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a large bowl, whisk together flour, granulated sugar, baking powder, and salt.
- In another bowl, mix milk, vegetable oil, egg, and vanilla extract. Pour wet ingredients into dry ingredients and stir until just combined.
- In a small bowl, beat cream cheese, brown sugar, and cinnamon until smooth.
- Fill each muffin cup halfway with batter. Add a spoonful of cream cheese mixture, then cover with more batter.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean. Let cool before serving.
