For the Crust:
- 4 boneless, skinless chicken breasts
- 4 medium potatoes, diced
- 1/4 cup olive oil
- 4 cloves garlic, minced
- 1/2 cup grated Parmesan cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C).
- In a large bowl, mix olive oil, minced garlic, Parmesan cheese, oregano, basil, salt, and pepper.
- Add diced potatoes to the bowl and toss to coat evenly.
- Transfer potatoes to a baking sheet and spread in a single layer.
- Bake for 15 minutes, then remove from oven.
- Coat chicken breasts with the remaining oil and seasoning mixture.
- Place chicken on the baking sheet with the potatoes.
- Return to oven and bake for another 15-20 minutes, or until chicken is cooked through.
- Garnish with fresh parsley before serving.
