For the Crust:

  • 1 lb chicken breast, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • 2 tbsp olive oil
  • 8 oz fettuccine pasta
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup sun-dried tomatoes, chopped
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

1. Prepare the Crust:

  1. Cook the fettuccine pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until golden brown and cooked through, about 6-8 minutes.
  3. Add minced garlic to the skillet and sauté for 1 minute until fragrant.
  4. In the same skillet, lower the heat and pour in the heavy cream. Stir in Parmesan cheese, Cajun seasoning, and sun-dried tomatoes. Simmer for 3-4 minutes until the sauce thickens.
  5. Add the cooked pasta to the skillet and toss to coat evenly with the sauce. Season with salt and pepper to taste.
  6. Garnish with fresh parsley before serving.
