For the Crust:

  • 2.5 lb tri-tip roast
  • 2 tbsp olive oil
  • 1 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp smoked paprika
  • 1 tsp dried rosemary
  • 1 tsp dried thyme

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F (220°C).
  2. In a small bowl, mix together salt, pepper, garlic powder, onion powder, smoked paprika, rosemary, and thyme.
  3. Rub the tri-tip roast with olive oil, then coat evenly with the spice mixture.
  4. Place the roast on a rack in a roasting pan and roast for 15 minutes.
  5. Reduce oven temperature to 350°F (175°C) and continue roasting for 20-25 minutes, or until internal temperature reaches 135°F (57°C) for medium-rare.
  6. Remove from oven, tent with foil, and let rest for 10 minutes before slicing against the grain.
