Flavorful Rice Pilaf

A fragrant and delicious rice pilaf with aromatic spices and vegetables.

For the Crust:

  • 1 cup basmati rice
  • 2 cups chicken or vegetable broth
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1/4 cup frozen peas
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp turmeric
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Rinse the basmati rice under cold water until the water runs clear.
  2. Heat olive oil in a pot over medium heat. Add onions and garlic, sauté until translucent.
  3. Add carrots and cook for 2 minutes. Stir in cumin, turmeric, salt, and pepper.
  4. Add the rinsed rice and stir to coat with the spices and oil.
  5. Pour in the broth, bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
  6. Add peas, cover again, and let sit for 5 minutes off the heat. Fluff with a fork before serving.

Notes

You can customize the seasonings to taste.
