For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil
  • 1/2 cup shredded cheddar cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add bell peppers and onion, sautéing until softened (about 5 minutes). Stir in chili powder, cumin, garlic powder, paprika, salt, and black pepper.
  3. Cut a pocket into each chicken breast, being careful not to cut all the way through. Stuff each breast with the fajita vegetable mixture and cheese.
  4. Sear the stuffed chicken breasts in the same skillet for 2-3 minutes per side until golden brown.
  5. Transfer skillet to the oven and bake for 20-25 minutes until chicken reaches 165°F (74°C) internally.
