For the Crust:
- 1 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1 cup dark chocolate chunks
- 3/4 cup shelled pistachios, roughly chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
- Fold in dark chocolate chunks and chopped pistachios.
- Drop tablespoon-sized dough portions onto prepared baking sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes or until edges are golden but centers are still soft.
- Let cookies cool on baking sheets for 5 minutes before transferring to wire racks.
