For the Crust:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 cup dark chocolate chunks
  • 3/4 cup shelled pistachios, roughly chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy.
  3. Beat in eggs one at a time, then stir in vanilla extract.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to the wet ingredients, mixing until just combined.
  5. Fold in dark chocolate chunks and chopped pistachios.
  6. Drop tablespoon-sized dough portions onto prepared baking sheets, spacing them 2 inches apart.
  7. Bake for 10-12 minutes or until edges are golden but centers are still soft.
  8. Let cookies cool on baking sheets for 5 minutes before transferring to wire racks.
