A fresh and crunchy romaine salad topped with sunflower seeds, pecans, and a light vinaigrette.

For the Crust:

  • 1 large head romaine lettuce, chopped
  • 1/2 cup sunflower seeds
  • 1/2 cup pecans, roughly chopped
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 2 tbsp olive oil
  • 1 tbsp apple cider vinegar
  • 1 tsp honey
  • 1/2 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine the chopped romaine, sunflower seeds, pecans, dried cranberries, and feta cheese.
  2. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
  3. Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
