For the Crust:
- 1 large head romaine lettuce, chopped
- 1/2 cup sunflower seeds
- 1/2 cup pecans, roughly chopped
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar
- 1 tsp honey
- 1/2 tsp Dijon mustard
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a large bowl, combine the chopped romaine, sunflower seeds, pecans, dried cranberries, and feta cheese.
- In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper.
- Drizzle the dressing over the salad and toss gently to combine. Serve immediately.
