For the Crust:
- 2 boneless, skinless chicken breasts
- 1/4 cup hot honey
- 1/2 cup breadcrumbs
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 4 cups mixed greens
- 1/2 cup sliced almonds
- 1/4 cup crumbled feta cheese
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Season chicken breasts with salt, pepper, garlic powder, and paprika.
- Coat chicken in breadcrumbs and place on a baking sheet. Bake for 25-30 minutes until fully cooked.
- Let chicken cool slightly, then slice into strips. Drizzle with hot honey.
- In a large bowl, mix mayonnaise and Dijon mustard. Add mixed greens and toss to coat.
- Top salad with honey-glazed chicken, sliced almonds, and crumbled feta cheese.
- Serve immediately and enjoy.
