For the Crust:

  • 2 boneless, skinless chicken breasts
  • 1 cup breadcrumbs
  • 1 egg, beaten
  • 4 cups mixed salad greens
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp Dijon mustard
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Dip chicken breasts in beaten egg, then coat with breadcrumbs. Place on the prepared baking sheet.
  3. Bake for 20-25 minutes, or until chicken is cooked through and crispy. Let cool slightly, then slice.
  4. In a large bowl, combine salad greens, cherry tomatoes, red onion, and Parmesan cheese.
  5. In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, salt, and pepper to make the dressing.
  6. Add sliced crispy chicken to the salad, drizzle with dressing, and toss gently to combine.

Notes

You can customize the seasonings to taste.
