Creamy White Chicken Enchiladas – A Cheesy Delight!

For the Crust:

  • 2 cups cooked shredded chicken
  • 8 flour tortillas
  • 2 cups shredded Monterey Jack cheese
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 2 cups chicken broth
  • 1 cup sour cream
  • 1 (4 oz) can diced green chilies
  • 1 tsp garlic powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C).
  2. In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1 minute.
  3. Gradually whisk in chicken broth until smooth. Cook until thickened, about 5 minutes.
  4. Remove from heat and stir in sour cream, green chilies, garlic powder, cumin, salt, and pepper.
  5. Mix 1 cup of the sauce with the shredded chicken. Fill each tortilla with chicken mixture and roll up.
  6. Place enchiladas seam-side down in a baking dish. Pour remaining sauce over the top and sprinkle with cheese.
  7. Bake for 20-25 minutes until bubbly and golden.
