For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 tablespoon butter

Instructions

1. Prepare the Crust:

  1. Heat olive oil and butter in a large skillet over medium heat. Add chicken breasts and cook until golden brown on both sides, about 5-6 minutes per side. Remove and set aside.
  2. In the same skillet, sauté onion and garlic until softened, about 3-4 minutes.
  3. Add rice, paprika, thyme, salt, and pepper. Stir to coat the rice with the seasonings.
  4. Pour in chicken broth and bring to a simmer. Return the chicken to the skillet, cover, and cook for 20 minutes or until rice is tender and chicken is cooked through.
  5. Stir in heavy cream and let simmer for another 2-3 minutes until the sauce thickens slightly. Serve hot.
