  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 4 cups pumpkin puree
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Garnish
  • Sour cream or Greek yogurt
  • Fresh parsley or chives, chopped

Instructions

  1. Preparation:
  2. Heat olive oil in a large pot over medium heat.
  3. Sauté onion until translucent, about 5 minutes.
  4. Add garlic and spices (cinnamon, nutmeg, ginger) and cook for 1 minute until fragrant.
  5. Soup Cooking:
  6. Stir in pumpkin puree and vegetable broth, bring to a simmer.
  7. Cook for 15 minutes, stirring occasionally.
  8. Remove from heat and blend soup until smooth using an immersion blender or in batches in a blender.
  9. Return soup to pot and stir in heavy cream.
  10. Season with salt and pepper to taste and warm through.

  12. Serve hot, garnished with a dollop of sour cream or Greek yogurt and sprinkled with fresh parsley or chives.
