- 2 tablespoons olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 4 cups pumpkin puree
- 4 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
- Garnish
- Sour cream or Greek yogurt
- Fresh parsley or chives, chopped
Instructions
- Preparation:
- Heat olive oil in a large pot over medium heat.
- Sauté onion until translucent, about 5 minutes.
- Add garlic and spices (cinnamon, nutmeg, ginger) and cook for 1 minute until fragrant.
- Soup Cooking:
- Stir in pumpkin puree and vegetable broth, bring to a simmer.
- Cook for 15 minutes, stirring occasionally.
- Remove from heat and blend soup until smooth using an immersion blender or in batches in a blender.
- Return soup to pot and stir in heavy cream.
- Season with salt and pepper to taste and warm through.
- Serving:
- Serve hot, garnished with a dollop of sour cream or Greek yogurt and sprinkled with fresh parsley or chives.
