Why I Love This Recipe

I have a deep personal connection to this Creamy Chicken Enchilada Soup because it was born from a desperate need for comfort on a particularly hectic rainy day. Health and Nutrition

Why it’s good for your body

This Creamy Chicken Enchilada Soup is a nutritional powerhouse, even though it tastes incredibly indulgent. It provides a fantastic source of lean protein from the shredded chicken, which is essential for building and repairing your muscles. Because the broth is tomato-based, you also get a healthy dose of the antioxidant lycopene. This soup delivers a wonderful variety of vegetables, so you are fueling your body with essential vitamins and minerals in every spoonful. Although it is wonderfully creamy, the consistency often comes from blended beans or a touch of Greek yogurt instead of heavy cream. You will feel satisfied and energized after enjoying a bowl of this delicious Creamy Chicken Enchilada Soup. The fiber from the beans and vegetables supports healthy digestion and helps you feel full longer. Furthermore, the spices like cumin and chili powder not only add flavor but also offer their own anti-inflammatory properties. Ultimately, this wholesome dish proves that comfort food can absolutely be good for you.

How it fits in a healthy lifestyle

This Creamy Chicken Enchilada Soup fits seamlessly into a balanced diet. It combines protein, fiber-rich vegetables, and healthy fats into a single, satisfying meal. For anyone following a high-protein plan, the chicken and beans make it an excellent choice to support your goals. The soup is naturally gluten-free when you use a verified gluten-free broth, and it can easily be made lower in carbs by adjusting the toppings. It is a perfect make-ahead option for busy weekdays, as it reheats beautifully for a quick and nutritious lunch or dinner. Pairing it with a simple side, like our Easy Avocado Salad, creates a perfectly rounded meal. You can also customize each bowl to your dietary needs, adding a dollop of Greek yogurt for extra protein instead of sour cream. How to Prepare This Dish

Steps and time-saving tips

First, grab your favorite large pot or Dutch oven and heat your oil over a medium-high setting. Next, immediately add your diced onion and sauté it for about three to four minutes until it turns soft and translucent. Then, stir in the minced garlic and cook everything for one more minute until the air smells absolutely fantastic. After that, pour in your chicken broth, diced tomatoes, green chiles, and all of those crucial spices like chili powder and cumin. Subsequently, bring this entire mixture to a lively boil before reducing the heat to a gentle simmer. Meanwhile, in a separate bowl, whisk together the masa harina with a bit of water to create a smooth slurry; this is your secret weapon for a perfectly thick Creamy Chicken Enchilada Soup without any lumps. Stir this slurry into the simmering pot and let everything cook together for ten minutes. Finally, turn the heat down to low and stir in your shredded cooked chicken, black beans, corn, and heavy cream. Heat everything through gently, and then serve your incredible soup topped with all your favorite fixings. For a brilliant time-saving tip, use a store-bought rotisserie chicken to skip the cooking and shredding step entirely.

Mistakes I’ve made and learned from

I have definitely learned a few lessons the hard way with this Creamy Chicken Enchilada Soup. Initially, I would impatiently add the cold cream directly from the fridge into the hot soup, which unfortunately caused it to curdle almost every single time. Now, I always temper it first by whisking a small amount of the hot soup into the cream in a separate bowl to gently warm it up. Another common mistake I made was boiling the soup after adding the dairy, which also leads to that unpleasant curdling. Furthermore, I once used an overly salty store-bought broth and didn’t taste it before adding my seasoning, resulting in a nearly inedible pot of soup. I now swear by using my own homemade chicken broth for the best flavor control. Ultimately, these small adjustments make a world of difference, ensuring your soup is restaurant-quality every time, just like my favorite restaurant-style salsa.

Cultural Connection and Variations

Where this recipe comes from

This soul-warming soup has its roots deep in the heart of Mexican home cooking, although it tells a story of adaptation. While traditional enchiladas require careful rolling and assembly, a busy home cook likely had the brilliant idea to deconstruct those beloved flavors into a simple, one-pot wonder. The result is a dish that carries all the comforting, familiar notes of a classic enchilada but in a form that’s incredibly forgiving and easy to share with a crowd.

You will often find families gathering around a large pot of this soup during chilly evenings or after a long day. In many households, the recipe is a cherished heirloom, passed down with slight tweaks that make it uniquely theirs. Some versions might use a rich, from-scratch chili sauce, while others rely on a trusted blend of spices to build that signature depth. The beauty of a true Creamy Chicken Enchilada Soup lies in its versatility, because it welcomes whatever you have on hand, making it a staple in many communities. This particular version of Creamy Chicken Enchilada Soup honors that tradition of flexibility and comfort.

How it fits in today’s cooking

This soup fits perfectly into our modern need for meals that are both comforting and convenient. It has become a go-to for easy weeknight dinners, while also being hearty enough for a casual weekend gathering with friends. Its relevance continues to grow as home cooks find new ways to adapt it to different dietary needs and preferences, ensuring it remains a favorite for years to come.

Many are now reimagining it by swapping in plant-based proteins or loading it up with extra vegetables for a nutritional boost. You can even draw inspiration from other one-pot wonders, like our favorite Hearty Beef Stew, by browning your chicken first for an extra layer of flavor. For a complete and satisfying meal, it pairs beautifully with a side of Easy Cornbread to soak up every last bit of the creamy, spiced broth.

Taste and Texture

What makes it delicious

This Creamy Chicken Enchilada Soup offers a deeply satisfying and complex sensory experience. You are first greeted by a fragrant, savory aroma that hints at smoky chilies and earthy cumin, so your kitchen smells incredible long before the first spoonful. The broth itself is luxuriously rich and velvety, because it is perfectly thickened with cream cheese and melty Monterey Jack. Tender, shredded chicken provides a hearty and protein-packed base in every single bite, while sweet corn and soft black beans add delightful pops of texture and flavor. Although the soup is wonderfully creamy, it is beautifully balanced by a gentle, warming heat from green chiles and enchilada sauce. Finally, a bright squeeze of fresh lime juice cuts through the richness, creating a truly addictive and well-rounded bowl. This Creamy Chicken Enchilada Soup is the ultimate comfort food with a south-of-the-border twist, as it delivers all the beloved flavors of the classic rolled dish in a comforting, spoonable form.

Boosting the flavor

You can easily elevate your soup with a few simple tricks, even though the base recipe is already packed with flavor. For an immediate upgrade, consider a smoky chipotle pepper in adobo sauce instead of the milder green chiles, because it will add a profound, complex heat. Toppings are your best friend here, so load up your bowl with crisp tortilla strips, creamy avocado slices, a dollop of cool sour cream, and a generous handful of fresh cilantro. A final sprinkle of our homemade taco seasoning just before serving will amplify the spices and add another layer of aromatic depth. For those who love a bit of tang, a swirl of our favorite creamy cilantro lime dressing introduces a bright, herby note that complements the soup’s richness perfectly. Do not forget to finish with a final squeeze of fresh lime juice, as its acidity is essential for balancing the creamy, cheesy base.

Tips for Success

Best practices for results

For the most flavorful base, always sauté your aromatics like onion and garlic until they are fragrant and translucent before adding any liquid, because this builds a deep flavor foundation for your Creamy Chicken Enchilada Soup. Shred your own chicken from a rotisserie chicken or from breasts you’ve poached, as it will be far more tender and moist than pre-shredded varieties. Although it’s tempting to add all the ingredients at once, stir in the cream cheese and heavy cream off the heat at the very end to prevent any chance of curdling, so your soup remains perfectly smooth and luxurious.

Mistakes to avoid

A common error is using a store-bought enchilada sauce that is too spicy or acidic, which can overpower the other ingredients; instead, always taste your sauce first and even consider making your own homemade red enchilada sauce for complete control over the flavor profile. Furthermore, avoid letting your soup reach a rolling boil after the dairy has been added, since high heat can cause the soup to break and become greasy. Even though you might be in a hurry, do not skip the step of garnishing your finished dish, as a sprinkle of fresh cilantro, a dollop of sour cream, and some crispy tortilla strips provide essential texture and freshness that elevate the entire meal, just like the perfect toppings for our best chicken tostadas.

Serving and Pairing Suggestions

How to serve this dish

For a truly memorable presentation, serve your Creamy Chicken Enchilada Soup in wide, shallow bowls. This style beautifully showcases all the delicious toppings. Immediately after ladling, create a vibrant topping bar with bowls of fresh cilantro, diced avocado, a dollop of sour cream, shredded cheese, and crunchy tortilla strips. Consequently, everyone can customize their bowl to their liking, making it perfect for a casual family dinner or a festive game day gathering.

Moreover, this soup is incredibly versatile for any occasion. It is an ideal cozy meal for a weeknight, yet it is also impressive enough for a holiday potluck or a casual weekend lunch with friends. For a visual enhancement, consider using colorful handmade bowls or a rustic tureen for serving. Ultimately, the rich, comforting aroma of this Creamy Chicken Enchilada Soup will draw everyone to the table.

What goes well with it

First, a crisp, refreshing beverage cuts through the soup’s richness beautifully. A chilled Mexican lager, a tangy margarita, or even a sparkling lime agua fresca provides a perfect counterbalance to the creamy texture. For a non-alcoholic option, iced tea with a hint of citrus works wonderfully.

Next, consider pairing it with a light, crisp side dish. A simple side salad with a bright vinaigrette offers a fresh contrast. Alternatively, you cannot go wrong with our crowd-pleasing Easy Mexican Corn Salad, which echoes the south-of-the-border flavors.

Finally, no Mexican-inspired feast is complete without something for dipping. Warm, soft flour tortillas are a must for scooping up every last bit. For an extra treat, serve a side of our irresistible Creamy Avocado Dip; its cool, creamy profile complements the warm, spiced soup perfectly.

What is a good side dish for chicken enchilada soup?

A warm, crusty piece of cornbread or a handful of tortilla chips for dipping are perfect sides. A simple side salad or Mexican street corn also pairs wonderfully with the rich flavors of this Creamy Chicken Enchilada Soup.

How do you thicken creamy enchilada soup?

You can create a slurry by whisking two tablespoons of cornstarch with an equal amount of cold water, then stir it into the simmering soup. Alternatively, blend a portion of the soup with beans or a can of diced green chiles and stir it back into the pot to thicken it naturally.

Can you freeze chicken enchilada soup?

Yes, you can freeze it, but for best results, omit any dairy like cream or cheese before freezing. Thaw the soup in the refrigerator overnight and reheat it gently on the stove, stirring in the fresh dairy when you are ready to serve your Creamy Chicken Enchilada Soup.

What kind of chicken is best for soup?

Boneless, skinless chicken thighs are excellent as they stay tender and juicy during cooking. You can also use a rotisserie chicken for a quick shortcut; simply shred the pre-cooked meat and stir it in at the end to heat through.

Chicken Enchilada Soup (Chili’s Restaurant Copycat Recipe)

  • Author: Kathy McDaniel

Description

This Chicken enchilada Soup recipe is filled with tender chicken, green chiles, black beans and sweet corn in a boldly flavored cheesy and creamy broth. Made with simple ingredients and packed with traditional Tex-Mex flavors, this easy enchilada soup recipe comes together in 30 minutes.

Ingredients

Scale

For the Crust:

  • 2 tablespoons olive oil
  • 1 small onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1/2 cup masa harina
  • 6 cups chicken broth (divided)
  • 1 4-ounces can green chiles
  • 1 15-ounces can fire roasted tomatoes with their juices (or diced tomatoes)
  • 2 teaspoons ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1 cup red enchilada sauce (I use mild)
  • 1 pound boneless and skinless chicken breasts or thighs
  • 1 15-ounces can black beans, rinsed and drained
  • 12 ounces frozen corn
  • 4 ounces cream cheese (cut into small cubes and softened)
  • 2 cups cheddar cheese (shredded, plus more for serving)
  • Shredded cheese (tortilla chips, chopped onions, sour cream, chopped cilantro, lime wedges, sliced or chopped avocado.)

Instructions

1. Prepare the Crust:

  1. In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the onions and sauté, stirring occasionally for about 4 minutes, or until the onions become translucent. Add the garlic and sauté, stirring frequently, for about 30 seconds or until aromatic.
  2. Just like when making a regular roux, sprinkle the masa harina over the softened onions and garlic and cook for about 1 minute, stirring constantly. Gradually and slowly, add about 1 cup of broth while stirring constantly.
  3. Next, stir in the green chiles, fire roasted tomatoes, ground cumin, chili powder, paprika, salt, enchilada sauce and the remaining chicken broth.
  4. Add the chicken, black beans and corn and stir to combine. Bring to a gentle boil and then lower the heat. Simmer, uncovered, stirring occasionally for 10 to 12 minutes or until the chicken is fully cooked.
  5. Remove the cooked chicken from the pot and onto a plate. Shred the chicken with two forks and then return it to the pot. Mix to combine.
  6. Add the softened cream cheese and stir until melted. Remove the pot from the heat and stir in the shredded cheese. Miix until the cheese has melted.
  7. Season to taste and serve immediately with your favorite toppings.
