Creamy Baked Tuscan Chicken with Mozzarella

Juicy chicken breasts baked in a creamy Tuscan-inspired sauce with spinach, sun-dried tomatoes, and melted mozzarella.

For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups fresh spinach
  • 1/3 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Season chicken breasts with garlic powder, Italian seasoning, salt, and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden. Remove and set aside.
  3. In the same skillet, add minced garlic and sauté for 30 seconds. Pour in chicken broth and heavy cream, stirring to combine.
  4. Add spinach, sun-dried tomatoes, and Parmesan cheese. Simmer for 2-3 minutes until spinach wilts.
  5. Return chicken to the skillet. Top with mozzarella cheese. Bake for 15-20 minutes until chicken is cooked through and cheese is bubbly.

You can customize the seasonings to taste.
