Delicious Cranberry Orange Muffins are a festive and delicious breakfast or snack for the holiday season! They mix together in 10 minutes and have bright and nostalgic Christmas flavors!

For the Crust:

  • 2 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1/2 cup sour cream
  • 1/2 cup orange juice
  • 1 tbsp orange zest
  • 1 tsp vanilla extract
  • 1 1/2 cups fresh cranberries, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F. Line a muffin tin with paper liners or grease well.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
  3. In a large bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs, one at a time, until well combined.
  5. Mix in sour cream, orange juice, orange zest, and vanilla extract.
  6. Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
  7. Gently fold in chopped cranberries.
  8. Divide batter evenly among prepared muffin cups, filling each about 3/4 full.
  9. Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
  10. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
