For the Crust:
- 2 cups all-purpose flour
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1/2 cup sour cream
- 1/2 cup orange juice
- 1 tbsp orange zest
- 1 tsp vanilla extract
- 1 1/2 cups fresh cranberries, chopped
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F. Line a muffin tin with paper liners or grease well.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
- In a large bowl, cream together butter and sugar until light and fluffy.
- Beat in eggs, one at a time, until well combined.
- Mix in sour cream, orange juice, orange zest, and vanilla extract.
- Gradually add dry ingredients to wet ingredients, mixing until just combined. Do not overmix.
- Gently fold in chopped cranberries.
- Divide batter evenly among prepared muffin cups, filling each about 3/4 full.
- Bake for 18-22 minutes, or until a toothpick inserted into the center comes out clean.
- Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
