For the Crust:
- 1 lb ground beef
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups chicken broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 8 lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
Instructions
1. Prepare the Crust:
- In a large pot, brown the ground beef over medium heat. Drain excess fat.
- Add the onion and garlic to the pot and sauté until softened, about 3 minutes.
- Stir in the crushed tomatoes, chicken broth, basil, oregano, salt, and pepper. Bring to a boil.
- Add the broken lasagna noodles and cook until al dente, about 10 minutes.
- In a small bowl, mix the ricotta, mozzarella, and Parmesan cheeses.
- Serve the soup hot, topped with a dollop of the cheese mixture.
