For the Crust:
- 3 cups fresh or frozen corn kernels
- 1 cup crumbled feta cheese
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- 1 tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
1. Prepare the Crust:
- If using fresh corn, boil or grill the corn until tender. Let cool and cut kernels off the cob.
- In a large bowl, combine corn, feta cheese, red onion, and cilantro.
- In a small bowl, whisk together olive oil, lime juice, salt, and pepper.
- Pour the dressing over the salad and toss gently to combine.
- Chill for at least 30 minutes before serving to allow flavors to meld.
