Cold Chicken Macaroni Salad

A refreshing and creamy pasta salad with tender chicken, crisp vegetables, and a tangy dressing.

For the Crust:

  • 2 cups cooked chicken, shredded
  • 2 cups elbow macaroni, cooked and cooled
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 celery stalk, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a large bowl, combine mayonnaise, sour cream, Dijon mustard, lemon juice, salt, and pepper.
  2. Add cooked macaroni, shredded chicken, celery, red bell pepper, red onion, and parsley to the bowl.
  3. Gently toss all ingredients until evenly coated with the dressing.
  4. Cover and refrigerate for at least 1 hour before serving to allow flavors to meld.
  5. Stir well before serving and adjust seasoning if needed.

Notes
