A creamy and dairy-free ice cream made with coconut milk for a rich, tropical flavor.

For the Crust:
- 2 cans (13.5 oz each) full-fat coconut milk
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 tsp salt
- Optional: 1/2 cup shredded coconut or fruit puree for flavor variations
Instructions
1. Prepare the Crust:
- In a medium saucepan, combine coconut milk, sugar, and salt. Heat over medium-low heat, stirring until sugar dissolves completely.
- Remove from heat and stir in vanilla extract (and any optional ingredients like shredded coconut or fruit puree).
- Let the mixture cool to room temperature, then refrigerate for at least 4 hours or overnight.
- Pour the chilled mixture into an ice cream maker and churn according to manufacturer’s instructions (about 20-25 minutes).
- Transfer to a freezer-safe container and freeze for 2-3 hours until firm.
