For the Crust:
- 4 large bell peppers (any color)
- 1 lb ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 cup shredded mozzarella cheese
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Cut the tops off the bell peppers and remove seeds and membranes. Place peppers in a baking dish.
- In a large skillet, brown the ground beef over medium heat. Drain excess fat.
- Add onion and garlic to the skillet and cook until softened, about 3 minutes.
- Stir in cooked rice, 1/2 cup tomato sauce, oregano, basil, salt, and pepper. Mix well.
- Spoon the beef mixture into the prepared bell peppers. Pour remaining tomato sauce over the peppers.
- Cover with foil and bake for 30 minutes. Remove foil, sprinkle with cheese, and bake uncovered for another 10 minutes or until cheese is melted.
