Christmas Prime Rib

A succulent and flavorful prime rib roast, perfect for Christmas dinner.

For the Crust:

  • 1 (5-7 lb) prime rib roast
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, chopped
  • 2 tbsp fresh thyme, chopped
  • 1 tbsp kosher salt
  • 1 tbsp black pepper
  • 1 tsp onion powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 450°F (230°C).
  2. In a small bowl, mix olive oil, garlic, rosemary, thyme, salt, pepper, and onion powder to form a paste.
  3. Rub the paste evenly all over the prime rib roast.
  4. Place the roast on a rack in a roasting pan, fat side up.
  5. Roast for 15 minutes, then reduce the oven temperature to 325°F (165°C) and continue roasting for about 15 minutes per pound for medium-rare, or until the internal temperature reaches 135°F (57°C).
  6. Remove from oven, tent with foil, and let rest for 20 minutes before slicing.
