For the Crust:
- 1 large egg
- 1/2 cup shredded mozzarella cheese
- 1 tbsp almond flour
- 1 tbsp cocoa powder
- 1 tbsp erythritol (or sweetener of choice)
- 1/2 tsp vanilla extract
- 1/4 tsp baking powder
- Pinch of salt
Instructions
1. Prepare the Crust:
- Preheat your waffle maker and lightly grease it.
- In a bowl, whisk the egg until frothy.
- Add all remaining ingredients and mix until well combined.
- Pour half the batter into the waffle maker and cook for 3-4 minutes until crispy.
- Repeat with remaining batter.
- Serve warm with whipped cream or sugar-free syrup if desired.
