For the Crust:

  • 1 large egg
  • 1/2 cup shredded mozzarella cheese
  • 1 tbsp almond flour
  • 1 tbsp cocoa powder
  • 1 tbsp erythritol (or sweetener of choice)
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • Pinch of salt

Instructions

1. Prepare the Crust:

  1. Preheat your waffle maker and lightly grease it.
  2. In a bowl, whisk the egg until frothy.
  3. Add all remaining ingredients and mix until well combined.
  4. Pour half the batter into the waffle maker and cook for 3-4 minutes until crispy.
  5. Repeat with remaining batter.
  6. Serve warm with whipped cream or sugar-free syrup if desired.
