For the Crust:
- 2 lbs boneless, skinless chicken breasts, diced
- 4 cups potatoes, peeled and cubed
- 1 cup ranch dressing
- 1 cup shredded cheddar cheese
- 1/2 cup cooked bacon, crumbled
- 1/2 cup green onions, chopped
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large bowl, mix diced chicken, potatoes, ranch dressing, garlic powder, onion powder, salt, and pepper until well coated.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Bake for 25 minutes or until chicken is cooked through and potatoes are tender.
- Remove from oven and sprinkle shredded cheddar cheese and crumbled bacon on top.
- Return to oven for 5 minutes or until cheese is melted.
- Garnish with chopped green onions before serving.
