Cheesy French Onion Potatoes

A comforting dish combining crispy potatoes with caramelized onions and melted cheese, inspired by French onion soup flavors.

For the Crust:

  • 2 lbs Yukon Gold potatoes, sliced into 1/4-inch rounds
  • 2 large yellow onions, thinly sliced
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 cup shredded Gruyère cheese
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Grease a 9×13 baking dish.
  2. In a large skillet, heat olive oil and butter over medium heat. Add onions and cook for 15-20 minutes until caramelized, stirring occasionally.
  3. Add thyme, salt, and pepper to the caramelized onions, then remove from heat.
  4. Layer half the potato slices in the baking dish. Top with half the onion mixture and half the cheeses. Repeat layers.
  5. Cover with foil and bake for 30 minutes. Remove foil and bake 10 more minutes until golden and bubbly.
  6. Let rest 5 minutes before serving.

You can customize the seasonings to taste.
