For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 large yellow onions, thinly sliced
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup beef broth
  • 1 tsp Worcestershire sauce
  • 1 cup shredded Gruyere cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 tsp fresh thyme leaves

Instructions

1. Prepare the Crust:

  1. In a large skillet, melt butter with olive oil over medium heat. Add onions, sugar, salt, and pepper. Cook, stirring occasionally, until onions are caramelized (about 20 minutes).
  2. Push onions to the sides of the skillet and add chicken breasts. Cook for 5-6 minutes per side until golden brown.
  3. Pour beef broth and Worcestershire sauce over the chicken. Simmer for 5 minutes.
  4. Sprinkle both cheeses and thyme over the chicken and onions. Cover and cook for 2-3 minutes until cheese is melted.
  5. Serve hot, spooning the cheesy onion mixture over each chicken breast.
