For the Crust:
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 tbsp fajita seasoning
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup shredded cheddar cheese
- 1/2 cup shredded Monterey Jack cheese
- Fresh cilantro for garnish
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a bowl, mix olive oil, fajita seasoning, garlic powder, and onion powder. Coat chicken breasts with the mixture.
- Place chicken in a baking dish and top with sliced bell peppers and onions.
- Bake for 25 minutes or until chicken is cooked through.
- Remove from oven, sprinkle cheeses on top, and return to bake for 5 more minutes or until cheese is melted.
- Garnish with fresh cilantro before serving.
