For the Crust:

  • 4 boneless, skinless chicken breasts
  • 2 bell peppers (any color), sliced
  • 1 onion, sliced
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp fajita seasoning
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh cilantro (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, toss chicken breasts with olive oil, fajita seasoning, salt, and black pepper until evenly coated.
  3. Place chicken in a baking dish and arrange sliced bell peppers and onions around it.
  4. Bake for 25 minutes or until chicken is cooked through (internal temperature reaches 165°F).
  5. Remove from oven and sprinkle both cheeses evenly over the chicken and vegetables.
  6. Return to oven for 5 minutes or until cheese is melted and bubbly.
  7. Garnish with chopped cilantro if desired and serve hot.
