Carrot Banana Bread

For the Crust:

  • 2 ripe bananas, mashed
  • 1 cup grated carrots
  • 1/2 cup brown sugar
  • 1/4 cup vegetable oil
  • 2 eggs
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a large bowl, mix mashed bananas, grated carrots, brown sugar, oil, and eggs.
  3. In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to the wet mixture, stirring until just combined.
  5. Pour batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick comes out clean.
  6. Let cool in the pan for 10 minutes before transferring to a wire rack.

Notes

You can customize the seasonings to taste.
