For the Crust:
- 2 ripe bananas, mashed
- 1 cup grated carrots
- 1/2 cup brown sugar
- 1/4 cup vegetable oil
- 2 eggs
- 1 1/2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp salt
Instructions
1. Prepare the Crust:
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a large bowl, mix mashed bananas, grated carrots, brown sugar, oil, and eggs.
- In another bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to the wet mixture, stirring until just combined.
- Pour batter into the prepared loaf pan and bake for 50-55 minutes, or until a toothpick comes out clean.
- Let cool in the pan for 10 minutes before transferring to a wire rack.
