For the Crust:

  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 bell pepper, diced
  • 2 celery stalks, chopped
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 tbsp Cajun seasoning
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/2 cup shredded cheddar cheese (optional)

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pot over medium heat. Add onion, garlic, bell pepper, and celery. Sauté until softened, about 5 minutes.
  2. Add diced potatoes, chicken broth, Cajun seasoning, smoked paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes or until potatoes are tender.
  3. Use an immersion blender to partially blend the soup, leaving some chunks for texture. Stir in heavy cream and heat through. Serve hot, topped with cheddar cheese if desired.

Notes
