Butternut Squash Casserole

For the Crust:

  • 1 large butternut squash, peeled and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1/2 teaspoon garlic powder
  • 1/2 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup breadcrumbs
  • 2 tablespoons melted butter

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss butternut squash cubes with olive oil, salt, pepper, thyme, and garlic powder.
  2. Spread squash on a baking sheet and roast for 25 minutes, until tender.
  3. Transfer roasted squash to a bowl, mash slightly, then stir in heavy cream and half of the Parmesan cheese.
  4. Spread mixture into a greased casserole dish. Combine breadcrumbs, melted butter, and remaining Parmesan; sprinkle over top.
  5. Bake at 375°F (190°C) for 20 minutes, until topping is golden and crispy.

Notes

You can customize the seasonings to taste.
