For the Crust:

  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour
  • 1/4 teaspoon salt

Instructions

1. Prepare the Crust:

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, cream together butter and sugar until light and fluffy. Beat in egg and vanilla.
  3. Gradually mix in flour and salt until just combined. Do not overmix.
  4. Drop by rounded teaspoonfuls onto prepared baking sheets, spacing about 2 inches apart.
  5. Bake for 10-12 minutes or until edges are lightly golden. Cool on wire racks.
