For the Crust:

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 3 1/2 cups powdered sugar
  • 2 cups semi-sweet chocolate chips
  • 2 tablespoons shortening

Instructions

1. Prepare the Crust:

  1. In a large bowl, mix peanut butter, butter, and vanilla until smooth.
  2. Gradually add powdered sugar, mixing until fully incorporated and dough forms.
  3. Roll dough into 1-inch balls and place on a parchment-lined baking sheet. Chill for 30 minutes.
  4. Melt chocolate chips and shortening in a double boiler or microwave, stirring until smooth.
  5. Using a toothpick, dip each peanut butter ball into chocolate, leaving a small circle uncovered to resemble a buckeye.
  6. Return to baking sheet and let chocolate set before serving.
