Broccoli Potato Cheese Soup

For the Crust:

  • 2 cups broccoli florets, chopped
  • 2 large potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 2 tablespoons butter
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon paprika

Instructions

1. Prepare the Crust:

  1. Melt butter in a large pot over medium heat. Add onion and garlic, sauté until fragrant.
  2. Add potatoes and vegetable broth. Bring to a boil, then reduce heat and simmer for 15 minutes until potatoes are tender.
  3. Stir in broccoli and cook for another 5 minutes until broccoli is tender.
  4. Reduce heat to low. Stir in heavy cream and shredded cheese until melted and smooth.
  5. Season with salt, pepper, and paprika. Simmer for 2 more minutes, then serve hot.

You can customize the seasonings to taste.
