For the Crust:

  • 1 lb boneless, skinless chicken breast, diced
  • 1 cup cooked rice
  • 1/2 cup shredded cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 1/4 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp lime juice
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a pan over medium heat. Add diced chicken, season with salt and pepper, and cook until fully done, about 8-10 minutes.
  2. In a small bowl, mix mayonnaise, sweet chili sauce, sriracha, and lime juice to make the bang bang sauce.
  3. Assemble bowls by dividing cooked rice, shredded cabbage, carrots, and cooked chicken among serving bowls.
  4. Drizzle the bang bang sauce over the chicken and garnish with chopped green onions.
  5. Serve immediately and enjoy.
