A seasonal twist on the classic Caesar salad, featuring roasted delicata squash croutons and a creamy dressing.

For the Crust:
- 1 delicata squash, seeds removed and cubed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1 large head romaine lettuce, chopped
- 1/2 cup grated Parmesan cheese
- 1/4 cup Caesar dressing
- 2 tbsp lemon juice
- 1 clove garlic, minced
- Anchovy paste (optional, to taste)
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F (200°C). Toss cubed delicata squash with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and slightly crispy.
- In a large bowl, combine chopped romaine lettuce and grated Parmesan cheese.
- In a small bowl, whisk together Caesar dressing, lemon juice, minced garlic, and anchovy paste (if using).
- Add the roasted squash croutons to the salad bowl. Drizzle with dressing and toss gently to combine. Serve immediately.
