A seasonal twist on the classic Caesar salad, featuring roasted delicata squash croutons and a creamy dressing.

For the Crust:

  • 1 delicata squash, seeds removed and cubed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 1 large head romaine lettuce, chopped
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • Anchovy paste (optional, to taste)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Toss cubed delicata squash with olive oil, smoked paprika, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and slightly crispy.
  2. In a large bowl, combine chopped romaine lettuce and grated Parmesan cheese.
  3. In a small bowl, whisk together Caesar dressing, lemon juice, minced garlic, and anchovy paste (if using).
  4. Add the roasted squash croutons to the salad bowl. Drizzle with dressing and toss gently to combine. Serve immediately.
